The harvest takes place in the second and third week of October when the grapes reach full maturity. The grapes are harvested respecting their integrity and intrinsic organoleptic characteristics.

The winemaking takes places in the respect of tradition that, after the selection of the best grapes, provides the destemming and the contact with the skins with the must for about 30 days at a controlled temperature of about 28-30°C. After about 18 hours, a small part of must is removed from the skins so as to permit a larger concentration of typical grape flavor in the remaining must.

Once the alcoholic fermentation and the extraction stage is completed the wine obtained is separated from the skins by soft pressing and decanted into small barrels (barriques) of French oak where the subsequent malolactic fermentation takes place.  The maturation and refinement in barriques lasts for 18 months until the end of the fermentation. The release for consumption takes place after further refinement int he bottle lasting 6 months.

The color of Perla Nera is ruby red of excellence intensity and tone with slightly garnet reflections. The bouquet is intense, persistent, with pleasant sensation of ripe fruit and strong aromas of spices. Harmony anda balance between the aromantic components give this wine a typical bouquet of Montepulciano area. The taste is pleasant, soft; the pleasant tannins make this wine warm, full-bodied; the remarkable intensity and persistence give it a broad, long and enjoyable taste.

Serve at temperature of 18-20°C.
