Harvesting takes place in the third week of August in relation to the full biological ripeness of the grapes evaluated by measuring sugar content, pH and total acidity. The grapes are harvested by hand during the coolest hours of the day, respecting their integrity and the organoleptic characteristics that will be expressed in the future wine.
Vinification takes place by applying the modern principles of white wine making, that is the contact of the skins with the must at a temperature of about 8-10°C for 8-10 hours in order to facilitate the extraction of the aromatic components of the skins. Then a soft pressing is carried out and the must is decanted for about 10-12 hours. The clear must obtained is then added with specific selected yeasts and fermented at a temperature of 16-18°C. The wine obtained is stored in steel tanks on the fine lees for about 3 months. After this period, the wine is racked and stored in steel tanks at a temperature of about 12°C, which allows its aromatic and freshness characteristics to remain intact until it is stabilized and bottled. At all stages of winemaking, in order to guarantee and protect the genuineness and wholesomeness of the product, the rules laid down in the specifications for the production of organic wines are respected.
Vinofollia Pinot Grigio d’Abruzzo has a straw yellow color with intense bright reflections. It has fruity hints of pear, apple and banana, slightly fruity. On the palate it is fine, fresh, sapid, harmonious and clear with a good aromatic persistence.
Serve at temperature of 10°C.
