The harvest takes place in the first half of September when the grapes reach full maturity. The bunches are harvested by hand in boxes during the coolest hours of the day.
The winemaking is done in the respect of tradition by applying the modern principles of oenological technique. The grapes are selected, destemmed and softly pressed. The must obtained is chilled to 12°C, hyperoxygenated and decanted for about 12 hours. The clear must that separates is racked and fermented at a controlled temperature of 14°C.
The wine obtained is quickly separated from thelees and stored in steel tanks at a temperature of aboutg 14°C. After a short ageing period of about 4 months, the wine is stabilized, filtered and bottled.
Sagitta has a bright straw yellow color. The bouquet is fresh, intens, fruity, with pleasant tropical and pomaceous nuances, very fine. The taste is balanced, intense and persistent.
Serve at a temperature of 10°-12°C.
