GRAPE VARIETY: 85 % Sauvignon, 15 % Sémillon

ALCOHOL: 12% vol


SUGGESTED FOOD: advised with fishes and shellfishes or as an “aperitif”.


After pressing out through a pneumatic press the whole must is stabilized at a temperature between 0 and 5° C during a week. Only 25 % of the Sauvignon and Semillon go through skin maceration.  After this operation, the winemaking is done at a temperature from 15 to 18° C.
